This homemade crispy nuggets is ready to go in just only 30 minutes.
INGREDIENTS
- 1 bag chips, any flavor
- 1/4 cup breadcrumbs (gluten-free)
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 large size eggs
- 1/2 cup gluten free flour
INSTRUCTIONS
- Heat oven to 400°F and set the rack to the middle position.
- Line a baking sheet with parchment paper and set aside.
- Add the chips to a food processor and pulse until they are finely crumbled. (Or alternately, you can use a rolling pin to crush the chips while they are still in their bag.)
- Transfer the crumbled chips to a small bowl and add in the breadcrumbs.
- Add the flour into another small bowl.
- Whisk the eggs in a separate small bowl.
- Coat the nugget in flour then dip in the egg mixture with your right hand until it is completely coated.
- Then, transfer it to the bowl with chips and breadcrumb mixture. (Use your left hand to carefully coat the chicken with the chips on all sides.)
- Press the chip mixture lightly on the chicken to help them stick.
- Transfer the fully coated chicken nugget to the prepared baking sheet.
- Repeat with the remaining chicken.
- Bake for 15 minutes or until the top coating of the nuggets are nice and crispy.
- Remove from the oven, flip the nuggets, and bake for another 10 minutes or until the chicken is cooked through.
- Transfer to your serving platter and serve warm with your favorite dipping sauces. Enjoy!
