Tapioca Pudding Recipe
A delicipous gluten free creamy pudding made with tapioca, milk, eggs and a hint of cinnamon and lemon zest.

- 1/2 cup tapioca pearls
- 3 cups milk
- 2 egg yolks
- pinch of salt
- cinnamon stick
- 1 teaspoon lemon zest
- 3/4 cup of sugar
- 1 teaspoon natural vanilla extract
- 1-2 teaspoon of cinnamon for garnishing
Add the coconut milk, cinnamon stick, salt, and tapioca into a medium-size bowl and cook on medium-high heat until the mixture thickens and is soft stirring occasionally.
Bring down the heat to a low simmer and add in the sugar, vanilla extract, and lemon zest and mix until combined.
Simmer for additional 5 minutes.
Turn off the heat and add the egg yolks and mix until well combined.
Remove from heat, take out the cinnamon stick and fill the plates with tapioca pudding.
Garnish with some berries or a hint of cinnamon or anise and serve.
