Easy Tapioca Pudding Recipe (Gluten Free)

  • 1/2 cup tapioca pearls
  • 3 cups milk
  • 2 egg yolks
  • pinch of salt
  • cinnamon stick
  • 1 teaspoon lemon zest
  • 3/4 cup of sugar
  • 1 teaspoon natural vanilla extract
  • 1-2 teaspoon of cinnamon for garnishing

INSTRUCTIONS 

  • Add the coconut milk, cinnamon stick, salt, and tapioca into a medium-size bowl and cook on medium-high heat until the mixture thickens and is soft stirring occasionally.
  • Bring down the heat to a low simmer and add in the sugar, vanilla extract, and lemon zest and mix until combined.
  • Simmer for additional 5 minutes.
  • Turn off the heat and add the egg yolks and mix until well combined.
  • Remove from heat, take out the cinnamon stick and fill the plates with tapioca pudding.
  • Garnish with some berries or a hint of cinnamon or anise and serve.
