- 2 cups white or brown rice
- 150 grams cooked tofu diced in small cubes
- 1 1/2 tablespoon vegan butter
- 1/2 cup Kimchi
- 1 tablespoon gochujang chili
- 2 tablespoons kimchi juice
- 1 tablespoon soy sauce or tamari
- 1 medium onion sliced
- 2 scallion stalks cut into rings
- 1 1/2 teaspoons sesame seeds
- 1 cup mixed vegetables carrots and peas optional
Add the vegan butter into a large frying pan or wok and melt on medium-high.
Toss in the onions and cook just until softened.
Add the kimchi and stir fry until onions begin to caramelize about 4 minutes.
Reduce the heat to medium and pour in the kimchi juice, soy sauce, cooked tofu, and cooked rice and stir fry for about 5 minutes or until the rice absorbs most of the liquid.
Sprinkle in the sesame and add the scallions and stir to combine cooking on medium heat for about 2 minutes.
