Ingredients
  

  • 1 bag chips any flavor
  • 1/4 cup breadcrumbs gluten-free
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 large size eggs
  • 1/2 cup gluten free flour

Instructions
 

  • Heat oven to 400°F and set the rack to the middle position.
  • Line a baking sheet with parchment paper and set aside.
  • Add the chips to a food processor and pulse until they are finely crumbled. (Or alternately, you can use a rolling pin to crush the chips while they are still in their bag.)
  • Transfer the crumbled chips to a small bowl and add in the breadcrumbs.
  • Add the flour into another small bowl.
  • Whisk the eggs in a separate small bowl.
  • Coat the nugget in flour then dip in the egg mixture with your right hand until it is completely coated.
  • Then, transfer it to the bowl with chips and breadcrumb mixture. (Use your left hand to carefully coat the chicken with the chips on all sides.)
  • Press the chip mixture lightly on the chicken to help them stick.
  • Transfer the fully coated chicken nugget to the prepared baking sheet.
  • Repeat with the remaining chicken.
  • Bake for 15 minutes or until the top coating of the nuggets are nice and crispy.
  • Remove from the oven, flip the nuggets, and bake for another 10 minutes or until the chicken is cooked through.
  • Transfer to your serving platter and serve warm with your favorite dipping sauces. Enjoy!
